Irresistable Raw Tacos

We’re going camping tomorrow! Usually when John and I pitch a tent, we are at Deep Creek Hot Springs, a beautiful spot, with several natural lithium pools as well as a cool river to relax in. There are some spectacular yoga rocks along the river that are just begging for Vrkshasana! However, it is a seven mile hike each way, which means that all of your gear is on your back–food included. So when it comes to camping food, I specialize in those items that are both nutrient rich and stable at room temperature. No cooler, no fire, no luxury items–unless you count chocolate, which I consider a necessity!

So today finds me in my kitchen, creating all the goodies that will nourish us under the sun and stars. As I was prepping, I realized that a few of my readers might be interested in some Irresistable Raw Tacos that I create before every camping adventure. Because they are raw they do not need refrigeration, and they are incredibly easy to make. Even my meat-eating friends agree–these are some damn good tacos.

The Ultimate ‘oh-my-golly-these-are-amazing’ Taco Recipe

Nutty Spread:
1 cup RAW walnuts
1 cup organic sundried tomatoes
2 tsp cumin
1 tsp coriander
4 tsp turmeric
1 tsp cayenne
2 tablsp Bragg’s Liquid Aminos
1/2 lemon (remove seeds first)
cracked peppercorn

Directions: Soak sundried tomatoes in purified water for 30 minutes. Dry completely in cloth towel.
Combine all ingredients in food processor, layering tomatoes on the bottom. Pulse until desired texture is found.

Sunny Spread:
1 cup + 1 extra handful RAW sunflower seeds
1 cup organic parsley (washed)
1 cup organic cilantro (washed)
1/2 lemon (remove seeds first)
4 tsp turmeric
2 tsp cayenne
1 tsp cumin
1 tsp corriander
olive oil to desired consistency
salt to taste

Directions: Combine all ingredients in food processor, layering parsley and cilantro on the bottom.
Pulse until desired texture is found.

To finish:
Combine both spreads into leaves of cabbage, kale or chard. Add sliced avocado and tomato, and enjoy!
